 Gory Halloween Desserts, October 26th Time: 3:00 - 5:30 pm Instructor: Jen Barney Cost: $120 Class Maximum: 10 Location: Meringue Bakery, 313 Main Street La Crosse, WI  Back by popular demand! This class is definitely a fan favorite. This class is all about having fun! You can expect to make an assortment of oozy tarts, bloody desserts, and spooky treats!  Desserts may include but are not limited to: cookies, eclairs, and cupcakes.  Each student will take home an assortment of desserts to celebrate Halloween.  Cancellation Policy: Should the bakery need to cancel class, registrants will be rescheduled to a new date or can apply their registration fee to a future cooking class. If clients are canceling or not able to attend tickets are non-refundable and non-transferrable. Tickets can be transferred to another client and we encourage clients to find their own spot replacements.

Sunday December 7th, Chocolate Truffles

Sunday December 7th, Chocolate Truffles 3:00-5:30 pm Cost: $120 Class Maximum:10   Each student will learn how to temper white chocolate, milk chocolate, and dark chocolate for the perfect shine and snap!  Demonstration includes tempering chocolate, chocolate ganache recipes, and the formation of rolled and molded truffles, bars, and chocolate lollipops.    This class is part demonstration and part hands-on. Each student can expect to take home several boxes of truffles and chocolates.  Cancellation Policy: Should the bakery need to cancel class, registrants will be rescheduled to a new date or can apply their registration fee to a future cooking class. Sunday December 14th, Holiday French Macaron Class

French Macaron Class 3

December 14th, Holiday French Macaron Class Time: 3:00-5:30 pm Instructor: Jen Barney Cost: $120 Class Maximum: 10 Location: Meringue Bakery, 313 Main Street La Crosse, WI    This class is focused on making as many flavors and colors of holiday French macarons as possible! This class is appropriate for a beginner, but our pace will move faster than our regular French macaron class. We will focus on holiday inspired designs and flavors. Each person can expect to leave with approximately 32 French macarons and a French macaron carrying tower! This way each client can freeze their towers and have them ready for their holiday tables!     Cancellation Policy: Should we need to cancel class, registrants will be rescheduled to a new date or can apply their registration fee to a future cooking class. Tickets are non-refundable.

Thank you for your interest in classes at Meringue Bakery. Jen Barney is starting a secondary business called Better Baker Academy. This business will focus on training pastry chefs practical bakery skills, etiquette, and will also feature virtual dessert classes for the public. In order to get this new business launched, Jen will be taking a short break from teaching in-person classes. Classes will be paused the summer and fall of 2025. However, Jen loves teaching and you can expect in-person classes to resume in the future!

If you have a gift certificate specifically for a Meringue Bakery class experience you can redeem them several ways:

  1. You can wait until in-person classes resume in the winter of 2026.
  2. You can transfer the class certificate into a bakery gift certificate.
  3. If you would like a refund we will honor that as well. Please email meringuelacrosse@gmail.com to discuss your options.

Jen is excited about Better Baker Academy and she looks forward to expanding her class reach by having a digital platform that she can teach from. Thank you for allowing her time over the next several months to get this new business launched!
